Glassware is an important part of every drink made. Customers expect their drinks a certain way and it is usually in a particular glass. Also choosing the correct glass will fill the drink, as in, if a drink is 3 oz. and you put it in a 12 oz glass, the customer will feel he is being shorted, even if the liquor is correct.
Another aspect is the visual, a Martini will not look like a Martini if it is in a highball glass.

A full service bar will use 11 catagories of glassware. There can be many styles within each catagory depending on the house.
